Anyone trying this fish for the first time will grimace at its bitterness and immediately push the dish away... But experienced chefs just laugh at such ignoramuses! The secret is that when placing a piece of Fiussa in your mouth, you must never inhale its smell! It is this smell that gives the fish such a disgusting taste... If you manage to swallow the fish exactly according to the rules, you will be amazed at how tender and pleasant it seems... It is said that such a treat requires thoughtfulness and patience: it is unlikely to appeal to constantly rushing warriors.
